Here’s a quick, easy, and delicious dinner that you can whip up on a weeknight or even for guests, without having to loosen your belt a notch. This dish is as satisfying as it is refreshing, and is totally healthy!
Ingredients (adjust according to how much each person will eat):
- 1 salmon filet
- 1 tablespoon Ghee/butter
- 1 lemon
- salt, pepper, ground ginger
- 1 avocado
- 1/2 small white or red onion
- 1 small lime
- 1 mango
First, heat up your grill. Meanwhile, make your salmon foil packet. Just make sure there is enough foil to cover the fish completely, and put the salmon in the foil, then squeeze fresh lemon juice over it, sprinkle some salt, pepper, and ground ginger, and smear both sides with some ghee or butter.
Put the foil packet on the grill, and cook for about 6-7 minutes, then flip and cook on the other side for another 6-7 minutes. Make sure to check your fish to ensure it’s cooked through.
For the salsa, just dice up the mango, avocado, and onion into tiny pieces, and squeeze fresh lime juice over the whole mixture. You can add salt/pepper according to your own preference, but I don’t think it’s needed.
Voila- just heap the salsa onto the salmon and enjoy. The salsa has a tangy, citrus-y quality that helps cut through the fattiness of the fish, and it makes for a refreshing summertime meal that can be whipped up quickly and painlessly. Let me know what you think!
