Girl Tries Paleo Southwest “Ranch”

Yes, “Ranch” is in quotes on purpose, because I don’t really know what else to call this concoction. It’s kinda ranchy, kinda spicy, kinda limey, definitely delicious. Seriously, you could spread this stuff on cardboard and it would be good.

Ingredients:

1 avocado

3-4 tablespoons of paleo mayo

1 jalapeno

1 lime

2 tablespoons cilantro

1/2 tspĀ garlic powder

1/2 tsp chili powder

Optional: 1/4 cup of avocado oil, to make a runnier dressing

This stuff could be used as a sauce or a dressing. I don’t add extra oil to mine, and I use this stuff on just about everything. I made this sauce using my new Ninja Blender, so here are the instructions, assuming you have a blender of sorts:

Remove pit from avocado, remove seeds from jalapeno, cut into big chunks. Add all ingredients into blender, and juice the lime over everything. Blend.

The final result has the same consistency as regular mayo, except this tastes 2958x better (that’s science). As you can see, Bailey was rather interested in having some. Note: do not feed to dogs.

This sauce is creamy, spicy, tangy, and awesome. If you’re wondering what to do with it, here are some of the ways i’ve been using it:

  • Mix with hard-boiled eggs for an awesome egg salad. Put it in lettuce cups and add some cherry tomatoes for sweetness.
  • Mix with chicken for chicken salad, serve as you wish. I also chose to do lettuce cups.
  • Make SouthWest BLT Wraps- Layer chicken, bacon, avocado, and tomato in a lettuce cup and top with this sauce.
  • Cut a cucumber into long, thin slices. Wrap slices with paleo turkey breast and use this sauce as a dipping sauce.
