Girl Tries Paleo Balsamic Bacon Brussel Sprouts

Yet again, I bring you a recipe that is three things: Easy, Paleo, and Delicious.

This is great as a side dish to any meat, fish, or poultry, or as a main dish if you like consuming brussel sprouts in large quantities. I’m not here to judge.

Ingredients:

1 package of brussel sprouts

3 strips of paleo-compliant bacon (no weird additives)

1/2 an onion

Balsamic Vinegar

First things first, chop your bacon into little pieces. Put that on a hot skillet, just until there’s some fat coming off of the bacon. Meanwhile, cut up your sprouts and your onions. Throw the sprouts on, and let them cook with the bacon for about 3 minutes.

Add a tablespoon or two of water to the pan, to help steam the sprouts. Once it has evaporated, add the chopped onion (better in thin strings rather than big chunks), and cook for another 7 or so minutes, until the onion is cooked and the sprouts are bright green. Test your sprouts to see if they’re cooked though- they should be soft but not mush.

If they’re done, turn the heat off, and liberally splash some balsamic vinegar on the entire mixture. This gives a great acidity and makes the onions retain some sweetness. You can add as much or as little as you like- do it to your own taste!
