This recipe is so simple that it almost feels wrong to call it a recipe. It’s more like “some stuff thrown together that happens to taste awesome,” but I guess that’s really what recipe means.
I actually had this salad at an Italian restaurant near my home a few years back, and I’ve been recreating it ever since. The chef served this simple arugula salad alongside grilled whole Branzino fish.
Here’s how you make it, in 2 simple steps.
1. Buy arugula, lemon, olive oil, Parmesan (or something like it)
Yeah- it’s actually that basic. Just drizzle some olive oil on your arugula, squeeze some fresh lemon juice, and add a healthy dose of delicious Parmesan. I personally used the Parmesan, Romano, Asiago mix (pre-shaved) from Trader Joe’s, because the only thing better than one cheese is three cheeses.
There you have it- the ridiculously simple, yet ridiculously delicious Lemon Arugula Salad. It’s tangy from the lemon, nutty from the cheese , and peppery from the arugula. It goes great as a side dish for meat, poultry, fish, or just as a snack on it’s own. Bonus: It’s waist-line friendly!
