I recognize that the title “Girl Tries Beet Soup” is either going to deter people because they’re thinking ew beets, or it’s going to bring out some weird fetish types. Either way, chill.
I’m of Ukranian descent, and beets are in 800% of the foods I was brought up on. Most notably, borscht. There are about 90 variations in borscht, from hot to cold to complicated to really simple.
Surprise: mine is very simple.
It starts with a can of Manischewitz Borscht. This is the best one in my opinion. Not too sweet, not too salty, and has nice bits of shredded beets in it. Bonus: It’s low cal.
Next, add stuff. My choice of stuff is cucumber and a hard boiled egg. This way I get protein in there, and it adds some good textural components. I like to dice everything up so that it’s easier to eat.
Then, just pour soup over it and enjoy! Yes, this is a cold soup, so it’s wicked refreshing and awesome on a hot day. Also, very diet friendly. If you wish, you can add a dollop of sour cream to make it a little creamier and offset some of the sweetness.
